Bright, herbaceous, and deeply satisfying, this Mediterranean-inspired bowl layers fluffy jasmine rice with tender steamed broccoli and protein-rich chickpeas, finished with a tangy za'atar-spiked yogurt and a lemon-garlic vinaigrette. Textures contrast — creamy yogurt, springy chickpeas, and crisp-tender broccoli — while flavors sing of citrus, garlic, and warm za'atar herbs.
Measure rice and rinse under cold water until the rinse water runs clear (about 3–4 rinses). Rinsing removes excess surface starch so the cooked jasmine rice is fluffy, not gummy.
Combine rinsed rice and 360 ml water (1 part rice : 1.5 parts water by volume for jasmine) in a medium saucepan with a pinch of salt. Bring to a gentle boil uncovered over medium-high heat, then immediately reduce heat to low, cover tightly and simmer for 12–14 minutes without lifting the lid. Rest, covered, off heat for 10 minutes. Cooking the rice this way traps steam to evenly hydrate each grain and create a light texture.
While the rice cooks, make the za'atar yogurt. In a medium bowl whisk together Greek yogurt (200 g), 1 teaspoon of za'atar (reserve remaining for garnish), 1 tablespoon of fresh lemon juice, a pinch of sea salt and 1 teaspoon of extra-virgin olive oil. Taste and adjust brightness with more lemon if needed. Mixing za'atar into yogurt lets the herb oils bloom in the dairy, giving a rounded, aromatic sauce.
Make the lemon-garlic vinaigrette: in a small bowl whisk together remaining lemon juice (about 3 tbsp), minced garlic (4 cloves), 3 tbsp extra-virgin olive oil, a generous pinch of salt and several grinds of black pepper. Let sit 5 minutes so the garlic mellows and infuses the oil — this softens raw garlic's sharp edge and harmonizes the flavors.
If using canned chickpeas: drain and rinse well. For extra flavor and texture, gently pat the chickpeas dry with paper towels. If you want them warm and slightly caramelized, toss them with 1 tbsp olive oil, a pinch of salt and roast on a sheet pan at 220°C/425°F for 12–15 minutes, shaking halfway. Roasting concentrates flavor and adds a pleasant chew; if short on time, serve them warmed in the vinaigrette instead.
Steam the broccoli: bring 2–3 cm of water to a simmer in a wide saucepan with a steamer basket. Place trimmed broccoli florets in the basket, cover and steam for 4–6 minutes until bright green and crisp-tender. Steam rather than boil to preserve color, nutrients and a satisfying snap; over-steaming makes broccoli mushy and dulls the flavor.
While broccoli is steaming, gently fold the chickpeas into half of the lemon-garlic vinaigrette (reserve the rest for drizzling over the finished bowls). Toss to coat and warm if chickpeas are pre-cooked. This quick toss seasons the chickpeas through and lets them absorb lemon-garlic flavor without overcooking.
Fluff the rested rice with a fork to separate grains and transfer to a warm shallow bowl or serving platter. Fork-fluffing lets trapped steam escape so rice doesn’t clump.
Build the bowls: divide rice among 4 bowls, top with an even layer of warm lemon-garlic chickpeas, then arrange steamed broccoli on the side. The layered plating keeps textures distinct — creamy sauce next to crisp vegetables.
