Ingredients

  • 300 g Labneh
  • 1 each Small cucumber
  • 10-12 each Cherry tomatoes
  • 8-10 each Kalamata olives
  • 1 tbsp Fresh mint
  • 1 lemon Lemon juice
  • 4 tsp Extra-virgin olive oil
  • 2 each Whole-wheat pita (sesame-free)
  • 20 g Crushed pistachios
  • to taste each Salt
  • to taste each Black pepper

Instructions

Wash and dice the small cucumber into small cubes. Set aside.

Halve or quarter the cherry tomatoes, depending on their size. Set aside.

Slice the Kalamata olives into rings. Set aside.

In a small mixing bowl, combine the diced cucumber, cherry tomatoes, sliced olives, and chopped fresh mint.

Add the juice of one lemon, 2 teaspoons of extra-virgin olive oil, salt, and black pepper to taste. Mix well to combine the salad ingredients.

Divide 300g of labneh evenly between two serving bowls, 150g per bowl.

Top each labneh serving with the cucumber-tomato-olive salad mixture.

Sprinkle with optional crushed pistachios if desired, dividing equally between the two servings.

Drizzle an additional teaspoon of extra-virgin olive oil over each bowl.

Heat the whole-wheat pita breads slightly, either in a toaster or a dry pan, until warm. Serve alongside the labneh bowls.
