Wash and roughly chop the cucumber into small cubes.
Halve the cherry tomatoes. Set aside.
Pit and halve the Kalamata olives. Set aside.
In a bowl, combine the chopped cucumber, halved cherry tomatoes, Kalamata olives, and chopped fresh mint.
Squeeze the juice of one lemon into the vegetable mix and drizzle 2 tsp of extra-virgin olive oil per serving. Stir the mixture gently to combine.
Add labneh to the bottom of each serving bowl, dividing it equally between the two bowls (approximately 150g per bowl).
Top the labneh with the cucumber and tomato mixture, distributing evenly between the two bowls.
Sprinkle crushed pistachios over the top to add a crunchy texture, if using.
Season with salt and black pepper to taste.
Serve with a whole-wheat pita on the side for each person.
