Ingredients

  • 300 g Labneh
  • 1 pieces Small cucumber
  • 12 pieces Cherry tomatoes
  • 10 pieces Kalamata olives
  • 1 tbsp Fresh mint
  • 1 tbsp Lemon juice
  • 4 tsp Extra-virgin olive oil
  • 2 pieces Whole-wheat pita
  • to taste optional Salt
  • to taste optional Black pepper
  • 20 g Crushed pistachios

Instructions

Divide the 300g labneh into 2 equal portions and spread each portion in the center of a shallow bowl to create a base.

Peel and dice the cucumber into small cubes.

Halve the cherry tomatoes.

Remove pits from the Kalamata olives (if necessary) and slice them into halves.

Divide the cucumber cubes, cherry tomato halves, and olive halves, and arrange them around the labneh base in each bowl.

Sprinkle the chopped fresh mint evenly over each bowl.

Drizzle each bowl with 2 teaspoons of extra-virgin olive oil.

Squeeze the lemon over both bowls for a citrusy flavor.

Season each bowl with salt and black pepper to taste.

Optionally sprinkle the crushed pistachios evenly over each bowl for added texture and flavor.

Serve each bowl with one whole-wheat pita on the side. Optionally, warm the pita for a few seconds in the toaster or on a skillet before serving.
