Preheat your oven to 200°C (400°F).
Slice the onions into thin rings.
Cut the chicken breasts into even-sized pieces, about 1 inch in size.
In a large bowl, combine the chicken pieces with olive oil, salt, black pepper, garlic powder, and dried oregano. Mix well to ensure all pieces are coated.
In a baking dish, spread out half of the onion slices to form a layer at the bottom.
Place the seasoned chicken pieces evenly over the onion layer.
Top the chicken pieces with the remaining onion slices.
Grate the cheddar cheese and sprinkle it evenly over the top of the onions and chicken.
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden brown.
Remove from the oven, let it rest for 5 minutes, then serve warm.
