Preheat your oven to 375°F (190°C).
Wash and peel the carrots, then slice them into 1/4-inch thick rounds.
Cut the chicken breast into bite-sized pieces.
In a large bowl, combine the chicken pieces, sliced carrots, olive oil, salt, black pepper, garlic powder, onion powder, and dried thyme. Toss until the chicken and carrots are well coated.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle the cheddar cheese evenly over the top of the chicken and carrot mixture.
Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown and the chicken is cooked through.
Remove from the oven and let it cool for a few minutes before serving. Enjoy your Cheesy Chicken and Carrot Bake!
