Ingredients

  • 2 pieces chicken breast
  • 2 large tomato
  • 1.5 cups rice
  • 1 cup milk
  • 1 cup cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups chicken broth
  • 2 tablespoons parsley

Instructions

Preheat your oven to 375°F (190°C).

Cube the chicken breasts into bite-sized pieces. Season with salt and pepper.

In a large oven-safe skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add minced garlic and chopped tomatoes. Cook for about 3 minutes until the tomatoes begin to break down.

Stir in the rice, coating it well with tomato and garlic mixture. Add chicken broth and bring to a boil.

Reduce heat to simmer, cover, and cook for about 10 minutes until most of the liquid is absorbed.

Return the browned chicken pieces to the skillet. Add milk and half of the cheese, stirring gently to blend well.

Transfer the skillet to the preheated oven and bake for 15 minutes.

Sprinkle the remaining cheese over the top and return to oven for another 5 minutes, or until cheese is melted and bubbly.

Remove from oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
