Ingredients

  • 2 medium tomato
  • 1 cup cheese
  • 2 medium potatoes
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 small onion
  • 2 cloves garlic
  • 2 cups water
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Instructions

Preheat your oven to 375°F (190°C).

Peel and slice the potatoes thinly, about 1/8 inch thick.

Slice the tomatoes into thin rounds.

Finely chop the onion and garlic.

In a large ovenproof skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent, about 5 minutes.

Add the sliced potatoes to the skillet, season with salt and pepper, and cook for an additional 5 minutes, stirring occasionally.

Add rice to the skillet, stir to combine with the onion and potatoes.

Add water to the skillet, bring the mixture to a boil, then reduce the heat to low, cover and simmer for 10 minutes.

Remove the skillet from the heat, and arrange the sliced tomatoes on top of the rice mixture.

Sprinkle the cheese evenly over the tomatoes.

Transfer the skillet to the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly, and the potatoes are tender.

Remove from the oven and let it sit for 5 minutes before serving.
