Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add 1 tablespoon of oil. Once hot, add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, add 2 tablespoons of butter. Once melted, add the dry rice and stir until the rice is coated in butter and lightly toasted, about 3 minutes.
Add 1 cup of milk and 2 cups of water to the skillet. Stir in 1 teaspoon of salt and 1/2 teaspoon of pepper. Bring to a simmer.
Cover the skillet and let it simmer on low heat for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
While the rice cooks, dice the cooked chicken into bite-sized pieces.
Once the rice is tender, stir in 1 cup of cheese until melted and well combined.
Add the diced chicken to the skillet, stirring until everything is well mixed.
Transfer the contents of the skillet to a baking dish. Sprinkle some additional cheese on top, if desired.
Bake in the preheated oven for 10-15 minutes, or until the cheese on top is bubbly and golden.
Serve hot and enjoy your delicious cheesy chicken and rice bake!
