Ingredients

  • 2 pieces chicken breast
  • 1 medium onion
  • 1 cup uncooked rice
  • 3 cloves garlic
  • 2 cups cheese
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

Preheat your oven to 375°F (190°C).

Dice the chicken breasts into bite-sized pieces. Season with salt and pepper.

Finely chop the onion and mince the garlic cloves.

In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat. Add the chicken pieces and cook until they are browned on all sides, about 5-6 minutes.

Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

Add the uncooked rice to the skillet and stir to coat the rice with the onion mixture. Cook for another minute.

Pour in the chicken broth and bring to a simmer. Return the cooked chicken to the skillet, spreading it evenly on top of the rice mixture.

Cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for 20 minutes.

Remove the skillet from the oven. Sprinkle the cheese evenly over the top and return to the oven, uncovered, for another 5-10 minutes, until the cheese is melted and bubbly.

Remove from the oven and let it sit for a few minutes before serving.
