In a medium-sized bowl, add 1 cup of low-fat cottage cheese.
Drain the pineapple chunks if using canned. Add 1/2 cup of pineapple chunks to the bowl with the cottage cheese.
Sprinkle 1 tablespoon of chopped walnuts over the cottage cheese and pineapple mixture.
Optionally, add a pinch of cinnamon on top for additional flavor.
Mix all the ingredients gently to combine.
Serve immediately, or refrigerate for up to one hour if you prefer it chilled.
