In a mixing bowl, combine 200 g of low-fat cottage cheese with a tiny pinch (1/8 tsp) of salt. Stir gently to evenly distribute the salt.
Chop the 100 g of fresh pineapple chunks into smaller bite-sized pieces, if they are not already in small pieces.
Add the chopped pineapple chunks to the cottage cheese in the mixing bowl. Fold them in gently to combine.
Coarsely chop the 20 g of walnuts and set aside a small amount for garnish.
Stir the remaining chopped walnuts into the cottage cheese and pineapple mixture until well combined.
Drizzle 1 tsp of honey over the top of the mixture and gently stir to incorporate.
Spoon the cottage cheese mixture into serving bowls. Sprinkle the reserved chopped walnuts over the top as a garnish.
