Teriyaki Salmon with Soba Noodles & Sesame Broccoli

Ingredients

  • 3 5 oz salmon fillets
  • 240 g dried soba noodles
  • 450 g broccoli florets
  • 2 tbsp low-sodium teriyaki sauce
  • 1 tsp sesame oil
  • 1 tbsp soy sauce (low sodium)
  • 1 tbsp sesame seeds
  • 1 tbsp olive oil

Instructions

Preheat your oven to 400°F (200°C).

Place the salmon fillets on a baking sheet lined with parchment paper. Brush each fillet with 1 tablespoon of teriyaki sauce and season with a pinch of salt and pepper.

Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.

While the salmon is baking, bring a large pot of water to a boil. Add a pinch of salt and the dried soba noodles. Cook according to package instructions, typically around 7-8 minutes. Drain and set aside.

In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and stir-fry for about 5 minutes until they're bright green and tender-crisp.

Add 1 tablespoon of soy sauce and 1 teaspoon of sesame oil to the broccoli. Toss well to coat, then sprinkle with sesame seeds. Stir-fry for another 2 minutes, then remove from heat.

Divide the cooked soba noodles among three plates. Top each with a salmon fillet.

On each plate, serve an equal portion of the sesame broccoli at the side.

Garnish with chopped green onions before serving.
