Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the salmon fillets on the prepared baking sheet. Brush each fillet with the low-sodium teriyaki sauce. Sprinkle with a pinch of salt and pepper if desired.
Bake the salmon in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, bring a large pot of water to a boil. Cook the soba noodles according to package instructions, usually about 6-8 minutes. Drain and rinse under cold water. Set aside.
Steam the broccoli florets in a steamer basket over boiling water for about 5 minutes until they are tender but still bright green.
In a large skillet, heat olive oil over medium heat. Add the steamed broccoli, cooked soba noodles, soy sauce, sesame oil, and sesame seeds. Toss well to combine and heat through for about 2-3 minutes.
Divide the soba noodle and broccoli mixture among serving plates. Top each plate with a baked salmon fillet.
Garnish with chopped green onions and additional sesame seeds if desired. Serve immediately.
