Preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper.
Place the salmon fillets on the prepared baking sheet. Brush each fillet with low-sodium teriyaki sauce and sprinkle with salt and black pepper. Let them marinate while you prepare other ingredients, about 10 minutes.
In a large pot, bring water to a boil. Add a pinch of salt and cook the soba noodles according to the package instructions (usually about 4-5 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the broccoli florets and sauté for about 5-7 minutes until they are tender yet crisp. Season with black pepper and half of the sesame seeds, and drizzle with sesame oil. Remove from heat.
Place the marinated salmon in the oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
In a separate pan, add the cooked soba noodles and sesame oil together with the soy sauce. Toss gently to combine and heat through for about 2-3 minutes.
Arrange the soba noodles on a serving plate, topped with salmon and a side of sesame broccoli.
Garnish with sliced green onions and the remaining sesame seeds before serving.
