Ingredients

  • 6 slices whole-grain bread slices
  • 12 oz sliced turkey breast
  • 1 large avocado
  • 6 leaves lettuce
  • 6 slices tomato slices
  • 6 rings red onion
  • 2 tbsp mayonnaise or olive-oil mayo
  • 4 cups mixed salad greens
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • to taste to taste salt
  • to taste to taste pepper

Instructions

Toast the whole-grain bread slices until golden brown and set aside.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, then season with salt and pepper to taste.

Spread a layer of mayo on three of the toasted bread slices.

On the same slices, spread a layer of the mashed avocado on top of the mayonnaise.

Layer the turkey breast slices evenly over the avocado and mayo on each slice.

Add a leaf of lettuce, a slice of tomato, and a red onion ring on top of the turkey for each sandwich.

Place the remaining slices of toasted bread on top to complete the sandwiches, pressing down gently.

In a large bowl, toss the mixed salad greens with olive oil, vinegar, salt, and pepper to taste.

Cut each sandwich in half and serve with a portion of mixed salad on the side.
