Ingredients

  • 2 slices Whole-grain bread
  • 3 oz Sliced turkey breast
  • 1/2 sliced Avocado
  • 1 slice Swiss cheese
  • 1 tsp Mayonnaise
  • 1 cup Mixed salad greens
  • 1 tbsp Olive oil
  • 1 tsp Lemon juice

Instructions

Preheat a non-stick skillet over medium heat.

Spread 1 teaspoon of mayonnaise evenly on one side of each whole-grain bread slice.

Place one slice of Swiss cheese on one of the slices of bread, on top of the mayonnaise spread.

Add the sliced turkey breast on top of the Swiss cheese.

Layer the avocado slices on top of the turkey breast.

Top with the remaining slice of bread, mayonnaise side down.

Place the sandwich in the preheated skillet and press down lightly with a spatula. Cook for about 2-3 minutes or until the bread is golden brown.

Flip the sandwich carefully and continue to cook on the other side for another 2-3 minutes or until golden brown and the cheese is melted.

Remove the sandwich from the skillet and let it sit for a minute before cutting it in half.

For the salad, toss mixed salad greens with 1 tablespoon olive oil, 1 teaspoon lemon juice, salt, and pepper to taste in a bowl.

Serve the warm turkey and avocado sandwich with the fresh mixed green salad.
