Ingredients

  • 450 g Labneh
  • 3 pieces Whole-wheat pita
  • 250 g Cherry tomatoes
  • 1 medium Cucumber
  • 18 pieces Olives
  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Za'atar
  • 1 large Lemon
  • 1 handful Fresh mint or parsley

Instructions

Preheat your oven to 200°C (390°F).

Cut the whole-wheat pita into small triangles and place them on a baking sheet. Drizzle with 1 tablespoon of extra-virgin olive oil and a pinch of salt. Bake for 5-7 minutes until crisp and golden brown. Remove from the oven and let cool slightly.

Dice the cucumber into small cubes and halve the cherry tomatoes. Place them in a mixing bowl.

Slice the olives in half and add them to the mixing bowl with the cucumber and cherry tomatoes.

Finely chop the fresh mint or parsley and add to the mixing bowl. Season with a pinch of salt and black pepper.

Add 2 tablespoons of extra-virgin olive oil, the juice of one lemon, and the za'atar to the vegetable mixture. Mix well to combine all the flavors.

Spread the labneh onto a serving platter, creating a swirl pattern with the back of a spoon.

Spoon the vegetable mixture over the top of the labneh, distributing it evenly.

Arrange the toasted pita triangles around the labneh and vegetables. Sprinkle a little extra za'atar on top if desired.

Serve immediately, allowing everyone to scoop up the labneh and vegetables with the crispy pita. Enjoy!
