Ingredients

  • 450 g Labneh
  • 3 small Whole-wheat pitas
  • 150 g Cherry tomatoes
  • 1 medium Cucumber
  • 1.5 tbsp Olive oil
  • 1 tbsp Za'atar
  • 3 pieces Lemon wedge
  • 1 handful Fresh mint or parsley
  • to taste - Salt
  • to taste - Pepper

Instructions

Preheat your oven to 180°C (350°F). Lightly brush the whole-wheat pitas with 1 tablespoon of olive oil and sprinkle half of the za'atar evenly over them. Place the pitas on a baking sheet and warm in the oven for about 5 minutes or until slightly crispy.

While the pitas are warming, wash and halve the cherry tomatoes. Peel the cucumber if desired, and slice it thinly. Set these aside.

In a medium bowl, combine the labneh with a pinch of salt and pepper, and mix well.

Distribute the labneh evenly into 3 serving bowls.

Arrange the cherry tomatoes, cucumber slices, and fresh mint or parsley on top of the labneh in each bowl. Drizzle a small amount of the remaining olive oil over the vegetables, and sprinkle the rest of the za'atar evenly over the bowls.

Serve each labneh bowl with a warm za'atar pita on the side, along with a lemon wedge for squeezing over the dish.
