Slice the cherry tomatoes in halves and the cucumber into thin rounds.
In a mixing bowl, combine cherry tomatoes and cucumber slices. Add a pinch of salt and a drizzle of olive oil (about 0.5 tbsp). Toss gently to combine and set aside.
On a serving plate, spread 150 g of labneh for each portion (450 g total for three plates).
Sprinkle 1/3 of the za'atar onto each labneh base evenly.
Top each labneh base with the tomato and cucumber salad mixture.
Garnish with fresh mint or parsley, dividing equally among the plates.
Drizzle the remaining olive oil (approx. 1 tbsp total) over the assembled bowls.
Heat or lightly toast the whole-wheat pitas and cut each into wedges. Serve alongside the labneh bowls.
Serve with a lemon wedge on the side for each plate, for added flavor if desired. Add salt and pepper to taste.
