  • 450 g Labneh
  • 3 pieces Whole-wheat pita
  • 250 g Cherry tomatoes
  • 1 medium Cucumber
  • 18 count Olives
  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Za'atar
  • 1 lemon Lemon juice
  • handful (for garnish) Fresh mint or parsley

Instructions

Preheat your oven to 350°F (175°C).

Slice the whole-wheat pita into wedges, brush with 1 tablespoon of extra-virgin olive oil, and sprinkle with a bit of salt. Place on a baking sheet and toast in the oven for 10 minutes until crispy.

While the pita is toasting, cut the cherry tomatoes in half and place them in a large bowl.

Dice the cucumber and add it to the bowl with the cherry tomatoes.

Add the whole olives to the bowl with the tomatoes and cucumber.

In a small bowl, whisk together the remaining 2 tablespoons of extra-virgin olive oil, freshly squeezed lemon juice, and za'atar. Pour this dressing over the tomato, cucumber, and olive mixture, and toss gently to combine.

To serve, spread the labneh evenly in a large serving bowl.

Top the labneh with the dressed tomato, cucumber, and olive salad.

Garnish with fresh mint or parsley leaves.

Serve alongside the toasted whole-wheat pita wedges.
