Preheat your oven to 350°F (175°C). Cut the whole-wheat pitas into triangles or strips and arrange them on a baking sheet. Drizzle with 1 tablespoon of extra-virgin olive oil and a sprinkle of za'atar. Bake for 5-7 minutes or until crispy.
While the pita chips are baking, wash and halve the cherry tomatoes, and slice the cucumber into thin rounds.
In a bowl, combine the cherry tomatoes, cucumber, and olives. Drizzle with 1 tablespoon of extra-virgin olive oil and lemon juice from 1 lemon. Toss gently to combine.
Spread the labneh evenly on the base of a serving bowl or platter. Scatter the tomato, cucumber, and olive mixture evenly over the top.
Sprinkle the remaining tablespoon of olive oil over the labneh, followed by the remaining za'atar.
Chop the fresh mint or parsley and sprinkle generously over the entire dish as a garnish.
Serve the labneh bowl with the crispy za'atar pita chips on the side for dipping.
