Preheat your oven to 350°F (175°C). Place the whole-wheat pitas on a baking sheet and warm them in the oven for about 5-7 minutes until slightly crispy, then remove and set aside.
Wash and halve the cherry tomatoes. Dice the cucumber into small cubes. Set both aside.
In a small bowl, combine olive oil and za'atar. Mix well to create a fragrant za'atar oil.
In a serving bowl, spread 150 g of labneh per person. Use the back of a spoon to create an attractive swirl.
Scatter the halved cherry tomatoes and diced cucumber evenly over the labneh in each bowl.
Drizzle the za'atar oil over the tomatoes and cucumber, ensuring even coverage.
Tear the fresh mint or parsley leaves and sprinkle generously over each bowl.
