Ingredients

  • 8 slices Sliced turkey breast
  • 6 slices Whole-grain bread
  • 1 whole Avocado
  • 1 medium Tomato
  • 4 leaves Lettuce
  • 2 tbsp Light mayo or Greek yogurt spread
  • 4 small Sweet potatoes
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

Preheat the oven to 425°F (220°C).

Wash and peel the sweet potatoes. Cut them into thin strips to make fries.

In a large bowl, toss the sweet potato fries with olive oil, paprika, and half of the salt and pepper until evenly coated.

Spread the sweet potato fries in a single layer on a baking sheet lined with parchment paper.

Bake the fries in the preheated oven for about 25-30 minutes, flipping halfway through, until they are crispy and golden brown.

While the fries are baking, toast the whole-grain bread slices lightly in a toaster.

Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth and season with a pinch of salt and pepper.

Slice the tomato into thin rounds.

To assemble the sandwiches, spread the light mayo or Greek yogurt spread evenly on one side of each toast slice.

On the first slice of bread, layer 2 slices of turkey, a leaf of lettuce, and a few tomato slices.

Add a second slice of bread with the mayo side facing down, then top with mashed avocado, 2 more slices of turkey, and another lettuce leaf.

Place the final slice of bread on top with the mayo side up. Press down gently to hold the sandwich together.
