Ingredients

  • 10 slices whole-grain bread
  • 15 oz sliced turkey breast
  • 10 slices cooked bacon
  • 5 tbsp mayonnaise (or olive-oil mayo)
  • 5 slices cheddar cheese
  • 2 large sweet potatoes
  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • to taste sprinkle salt
  • to taste sprinkle pepper
  • 1 tsp smoked paprika

Instructions

Preheat your oven to 425°F (220°C).

Wash and peel the sweet potatoes, then cut them into fry shapes.

Place the fries into a bowl and toss with 1 tablespoon olive oil, smoked paprika, salt, and pepper.

Spread the fries in a single layer on a baking sheet lined with parchment paper and bake for 25-30 minutes, turning halfway through, until golden and crispy.

While the fries are baking, toast the slices of whole-grain bread until golden brown.

Spread 1 tablespoon of mayonnaise on 5 slices of toasted bread. Reserve the remaining slices as sandwich tops.

Layer each sandwich with 3 oz of sliced turkey breast, 2 slices of bacon, 1 slice of cheddar cheese, and a handful of salad greens.

Top each sandwich with a slice of the remaining toasted bread.

In a medium bowl, toss the remaining salad greens with halved cherry tomatoes, a sprinkle of salt and pepper, and 1 tablespoon olive oil. Mix well and serve as a side salad.
