  • 8 slices whole-grain bread
  • 8 oz sliced roasted turkey breast
  • 4 slices cooked turkey bacon or regular bacon
  • 4 leaves lettuce
  • 1 large tomato
  • 2 tbsp light mayo or avocado spread
  • 2 pieces medium sweet potatoes
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

Preheat the oven to 425°F (220°C).

Cut the sweet potatoes into fries, about 1/4 inch thick.

In a large bowl, toss the sweet potato fries with olive oil, 1/2 tsp salt, and 1/4 tsp pepper until evenly coated.

Spread the fries in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

While the fries are baking, toast the whole-grain bread slices until golden brown.

Prepare the tomato by slicing it into thin rounds.

On four slices of toasted bread, spread 1/2 tbsp of light mayo or avocado spread each.

Layer with two slices of roasted turkey breast, one slice of bacon (halved to fit), a leaf of lettuce, and two slices of tomato on each prepared bread slice.
