Ingredients

  • 8 slices whole-grain bread
  • 200 g sliced turkey breast
  • 1 whole avocado
  • 4 leaves lettuce
  • 1 medium tomato
  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1.5 tsp salt
  • 1 tsp pepper

Instructions

Preheat the oven to 425°F (220°C).

Wash and cut the sweet potatoes into thin fries. Toss in a bowl with 1 tablespoon of olive oil, 1 teaspoon of salt, and 0.5 teaspoon of pepper until evenly coated.

Spread the sweet potato fries on a baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden and crispy.

While the fries are baking, toast the whole-grain bread slices until golden.

Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork and season with a pinch of salt and pepper.

Slice the tomato into thin slices.

Assemble the sandwiches: Spread a layer of the mashed avocado on one slice of toasted bread, top with a leaf of lettuce, a few slices of tomato, and 50g of turkey breast. Cover with another slice of toasted bread. Repeat to create four sandwiches.
