  • 1/2 whole Avocado
  • 4 leaves Large romaine or butter lettuce leaves
  • 1 small Sweet potato
  • 1 tbsp Olive oil
  • 1 tbsp Light mayo or Greek yogurt
  • to taste N/A Salt
  • to taste N/A Black pepper

Instructions

Preheat oven to 425°F (220°C).

Cut the small sweet potato into fry shapes, about 1/4-inch thick.

In a bowl, toss sweet potato fries with 1 tbsp olive oil, salt, and black pepper.

Spread the fries on a baking sheet in a single layer.

Bake in the preheated oven for 20-25 minutes, turning once halfway through, until crispy and golden brown.

While the fries are baking, slice the avocado.

Lay out the romaine or butter lettuce leaves.

Place an equal amount of sliced turkey breast and sliced avocado on each lettuce leaf.

Add a small dollop of light mayo or Greek yogurt if using.
