Preheat your oven to 200°C (400°F). Prepare a baking sheet by lining it with parchment paper.
In a large mixing bowl, toss the sweet potato fries with 2 tablespoons of olive oil, 1 teaspoon of salt, 0.5 teaspoon of pepper, and 0.5 teaspoon of smoked paprika until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes, turning once halfway through, until golden brown and tender.
While the sweet potatoes are baking, prepare the apple slaw. In a medium-sized bowl, combine the julienned apples, shredded cabbage/carrot mix, and 3 tablespoons of plain yogurt or light mayo. Season with the remaining 0.5 teaspoon of salt and a bit of pepper. Toss to combine thoroughly.
Lay out the whole-grain tortillas on a clean surface. Place about 75g of sliced turkey breast and 15g of Swiss cheese onto each tortilla.
Top each wrap with a generous amount of the apple slaw. Carefully roll up each tortilla, folding the sides in as you go to create a neat wrap.
Slice each wrap in half diagonally and serve with the baked sweet potato fries on the side.
