Preheat your oven to 210°C (410°F).
Peel the sweet potatoes and cut them into fry-sized pieces. Toss them in 2 tbsp of olive oil, 1/2 tsp of smoked paprika, 1/2 tsp of salt, and 1/2 tsp of pepper. Spread them out on a baking sheet in a single layer.
Bake the sweet potato fries for 25-30 minutes, flipping halfway through, until crisp and golden.
While the fries are baking, julienne the apples. In a large bowl, mix the apples with the shredded cabbage/carrot mix.
In a small bowl, combine 3 tbsp of plain yogurt or light mayo with a pinch of salt and pepper. Stir well to make the slaw dressing.
Pour the dressing over the apple and cabbage mixture and toss until well coated. Set aside.
Lay out the whole-grain tortillas on a clean surface. Distribute the sliced turkey breast evenly among the tortillas (about 75 g per wrap), followed by slices of Swiss cheese (about 15 g per wrap).
Optionally, warm the filled tortillas in a pan over medium heat to melt the cheese slightly (about 2-3 minutes).
Roll each tortilla into a wrap.
Serve two wraps per person with a side of apple slaw and a generous portion of baked sweet potato fries.
