Preheat the oven to 200°C (390°F).
Cut the sweet potatoes into evenly-sized fries. In a large bowl, toss the fries with olive oil, salt, pepper, and smoked paprika until well coated.
Spread the sweet potato fries in a single layer on a baking sheet and bake in the preheated oven for 25-30 minutes, turning halfway through, until golden and crispy.
While the fries are baking, prepare the apple slaw by slicing the apples into thin matchsticks or julienne style. Combine the apple slices with the shredded cabbage/carrot mix in a large bowl.
In a small bowl, whisk together the plain yogurt or light mayo with a pinch of salt and pepper. Add the dressing to the apple and cabbage mix and toss until well combined.
Arrange the whole-grain tortillas on a flat surface. Layer each tortilla with an equal portion of sliced turkey breast and Swiss cheese.
Place an equal amount of the apple slaw onto each wrap, then fold the sides in and roll up the tortillas tightly to enclose the filling.
Once the sweet potato fries are done, remove them from the oven and season with additional salt if desired.
Serve the Turkey & Swiss Whole-grain Wraps with the Apple Slaw alongside the Baked Sweet Potato Fries.
