Preheat your oven to 425°F (220°C).
Wash and peel the sweet potatoes. Cut them into thin fries or wedges, as preferred.
In a large bowl, toss the sweet potato fries with 2 tablespoons of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of paprika, and a pinch of salt and pepper until well coated.
Spread the sweet potato fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
While the fries are baking, cook the bacon (if using) in a pan over medium heat until crispy. Remove from pan and drain on paper towels.
Toast the whole grain bread slices until golden brown.
In a small bowl, mash the avocado and season with a pinch of salt and pepper to taste.
Slice the tomato into thin slices.
Spread a thin layer of mayonnaise on each slice of toasted bread.
Assemble each club sandwich: start with one slice of bread, mayonnaise side up, layer with lettuce, tomato slices, 2 oz of turkey, avocado mash, and a slice of bacon (if using). Top with another slice of bread, mayonnaise side down.
Cut the sandwiches diagonally to create two triangles per sandwich. Serve with the sweet potato fries on the side.
