Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Lay the turkey bacon slices on the sheet in a single layer.
Place the baking sheet with turkey bacon in the oven and bake for about 15 minutes or until crispy, flipping halfway through. Once done, remove from oven and set aside to cool slightly.
While the bacon is cooking, toast the whole-grain bread slices until golden brown and crispy. You can use a toaster or under the broiler in the oven.
Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add a pinch of salt, pepper, and a squeeze of lemon juice. Mash the avocado to your desired consistency.
Heat 1 tablespoon olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet, sprinkle with salt and pepper, and cook until the whites are set and the yolks are slightly runny (or to your desired doneness).
Spread the mashed avocado evenly over each slice of toasted bread.
Lay 3 slices of crispy turkey bacon on top of the avocado on each slice of toast.
Carefully place a cooked egg on top of each piece of bacon-covered toast. Add more salt, pepper, or lemon juice to taste, if desired.
