Ingredients

  • 3 slices whole-grain bread
  • 1.5 pieces medium avocados
  • 3 pieces large eggs
  • 9 slices turkey bacon (soy-free)
  • 1 tbsp olive oil or butter
  • to taste n/a salt
  • to taste n/a pepper
  • to taste n/a lemon

Instructions

Begin by cooking the turkey bacon in a skillet over medium heat until crispy, about 5-7 minutes. Set aside on a paper towel to drain excess oil.

While the bacon is cooking, toast the whole-grain bread slices until they are golden and crispy. Set aside.

Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Season with salt, pepper, and a squeeze of lemon juice to taste.

In a clean skillet, heat 1 tablespoon of olive oil or butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 4-5 minutes for sunny-side-up eggs. Season with a pinch of salt and pepper.

Spread the mashed avocado evenly on each slice of toasted bread.

Place 3 slices of turkey bacon on each piece of avocado toast.

Top each toast with a sunny-side-up egg.
