  • 4 large Eggs
  • 1 pod Vanilla beans
  • 1/4 cup Honey
  • 1/2 cup Brown sugar
  • 1 1/2 cups Flour
  • 1/4 cup Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Milk
  • 1/4 cup Butter

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, mix flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the eggs using an electric mixer until they thicken and turn a pale yellow color, about 5 minutes.

Gradually add brown sugar and sugar while continuously beating until the mixture is fluffy.

Split the vanilla pod lengthwise and scrape the seeds into the egg and sugar mixture, then add the honey and continue to beat until combined.

Incorporate the flour mixture into the egg and sugar mixture gently, alternating with milk, starting and ending with flour. Mix until just combined.

Melt the butter and slowly fold it into the batter, being careful not to deflate the mixture.

Pour the batter into the prepared cake pan, smoothing the top.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
