Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large bowl, sift together the flour, baking powder, and salt. Set aside.
In another bowl, cream together the butter and brown sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer.
Add the eggs one at a time to the butter and sugar mixture, beating well after each addition.
Split the vanilla bean lengthwise and scrape the seeds into the egg mixture. Discard the pod or save it for another use.
Add the honey and granulated sugar to the wet ingredients and mix until well combined.
Alternately add the flour mixture and the milk to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined, being careful not to over-mix.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely before serving.
