In a microwave-safe bowl, melt 2 tablespoons of butter then stir in honey until well combined to create honey butter. Set aside.
In a small bowl, whisk together 2 tablespoons of sugar, and the seeds scraped from 1 vanilla bean.
In a large mixing bowl, combine 1.5 cups of flour, 1 tablespoon of baking powder, and 0.25 teaspoon of salt. Mix well.
In another bowl, beat 2 large eggs and then whisk in 1.25 cups of milk. Add the vanilla sugar mixture and whisk until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just blended. Do not overmix - some lumps are fine.
Melt a little butter in a non-stick skillet over medium heat. Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the top and edges of the pancake look set, then flip and cook until golden brown on the other side, about 2 minutes per side.
Serve warm pancakes with a dollop of honey butter and a drizzle of extra honey if desired.
