In a large bowl, whisk together 1.5 cups of flour, 0.5 tsp salt, and 1 tbsp sugar until well combined.
In another bowl, whisk together 2 eggs, 1 cup milk, 2 tbsp honey, and the seeds of 1 vanilla pod until smooth.
Melt 2 tbsp of butter and add it to the wet ingredients, mixing until fully incorporated.
Combine the wet and dry ingredients, stirring gently until just combined. Do not overmix; some lumps are okay.
Heat a non-stick skillet over medium heat and add a small amount of butter. Pour 1/4 cup of batter onto the skillet for each pancake.
Cook the pancakes until bubbles form on the surface and the edges begin to set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
For the syrup, melt 1 tbsp of butter in a small saucepan over medium heat. Add 0.5 cup of brown sugar and 1/4 cup of water, stirring constantly until the sugar dissolves.
Bring the mixture to a boil, then reduce the heat to low and simmer for 3 minutes, stirring occasionally. Remove from the heat and let it cool slightly to thicken.
Serve the pancakes warm, drizzled with the brown sugar syrup.
