Ingredients

  • 4 slices Whole-grain bread
  • 200 g Sliced turkey breast
  • 1 medium Avocado
  • 1 medium Tomato
  • 4 leaves Lettuce
  • 1/4 medium Red onion
  • 2 tbsp Mustard
  • 100 g Mixed salad greens
  • 3 tbsp Olive oil & lemon dressing
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

Toast the whole-grain bread slices until golden brown.

Slice the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork and add a pinch of salt and pepper to taste.

Spread a layer of mustard on two slices of toasted bread and avocado mash on the other two slices.

Place 100g of sliced turkey breast onto the mustard-covered toast slices.

Cut the tomato into thin slices and layer them on top of the turkey slices.

Add a layer of lettuce leaves and thin slices of red onion on each sandwich.

Top with the avocado-smeared slices of toasted bread. Press down gently to secure the fillings.

In a salad bowl, combine the mixed salad greens and dress with olive oil & lemon dressing. Toss gently to combine.

Cut the sandwiches in half and serve on plates with a portion of the mixed salad greens on the side.
