Ingredients

  • 4 slices Whole-grain bread
  • 6 slices Sliced turkey breast (cooked)
  • 1 whole Avocado
  • 1 medium Tomato
  • 4 leaves Lettuce
  • 1/4 medium Red onion
  • 2 tbsp Mustard or light mayo
  • 2 cups Mixed salad greens
  • 2 tbsp Olive oil & lemon dressing
  • to taste none Salt
  • to taste none Black pepper

Instructions

Toast the whole-grain bread slices in a toaster or on a skillet over medium heat until golden brown and crisp.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Season with salt and black pepper to taste.

Slice the tomato and red onion into thin rings.

Spread 1 tablespoon of mustard or light mayo on each of the two slices of toasted bread.

On one slice of bread, layer 3 slices of turkey breast, 2 lettuce leaves, a generous amount of mashed avocado, several slices of tomato, and a few rings of red onion.

Top with the second slice of bread, mustard/mayo side down, to complete the sandwich. Repeat the assembly for the second sandwich.

In a salad bowl, combine mixed salad greens. Drizzle with olive oil & lemon dressing, and toss until evenly coated. Season with salt and black pepper to taste.

Serve each sandwich with a generous helping of the side salad.
