Ingredients

  • 4 slices Whole-grain bread
  • 200 g Sliced turkey breast (cooked)
  • 1 medium Avocado
  • 1 medium Tomato
  • 4 leaves Lettuce
  • 1/4 small Red onion
  • 2 tbsp Mustard or light mayo
  • 100 g Mixed salad greens
  • 2 tbsp Olive oil & lemon dressing
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
  • 1 tsp Olive oil

Instructions

Toast the whole-grain bread slices in a toaster until golden brown.

Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork and add a pinch of salt and black pepper for seasoning. Stir well.

Slice the tomato into thin slices. Peel and thinly slice the red onion.

Spread mustard or light mayo onto one side of each slice of toasted bread.

Layer the mashed avocado on two slices of the toasted bread.

Place two slices of turkey breast on top of the avocado on each sandwich.

Add tomato slices, lettuce leaves, and onion slices on top of the turkey.

Top with the remaining slices of toasted bread, mustard side down, to complete the sandwich.

In a mixing bowl, toss the mixed salad greens with olive oil & lemon dressing until they are evenly coated.

Serve each sandwich alongside a portion of the mixed salad greens. Drizzle a bit more dressing on the salad if desired.
