In a large mixing bowl, combine 1 cup of rolled oats, 1 cup of Greek yogurt, and 1/2 cup of milk. Stir until the ingredients are well blended.
Add 2 tablespoons of chia seeds to the mixture and mix well to ensure that the seeds are evenly distributed.
Slice the banana and add to the bowl along with 1 cup of mixed berries. Gently fold the fruits into the oat mixture.
Stir in 2 tablespoons of almond butter and 1 tablespoon of honey into the mixture until everything is well combined.
Divide the mixture among 4 airtight containers or jars. Seal the containers, and refrigerate overnight, or for a minimum of 6 hours to allow the oats to soak and the flavors to meld.
Before serving the next morning, give the oats a good stir and add a splash of milk if needed to reach your desired consistency.
Serve the overnight oats chilled, topped with additional mixed berries or a drizzle of honey if desired.
