Cook the soba noodles according to the package instructions. Drain and set aside.
Slice the chicken breast into thin strips.
In a large pan or wok over medium heat, add 1 tablespoon of sesame oil.
Add the grated ginger and minced garlic, and stir-fry for about 30 seconds until fragrant.
Add the sliced chicken to the pan. Stir-fry for about 5-6 minutes, or until the chicken is cooked through.
Add the broccoli florets, sliced bell pepper, and julienned carrot. Stir-fry for an additional 5 minutes, or until the vegetables are tender-crisp.
Add the cooked soba noodles to the pan.
Pour in 2 tablespoons of soy sauce and stir everything together well to ensure the sauce coats the chicken, noodles, and vegetables evenly.
