Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions (usually about 5-7 minutes) until just tender. Drain and set aside.
While the noodles are cooking, heat the sesame oil in a large pan or wok over medium-high heat.
Add the minced garlic and ginger to the pan and sauté for about 30 seconds until fragrant.
Add the sliced chicken breast to the pan. Season with a pinch of salt and pepper. Stir-fry for about 4-5 minutes, until the chicken is cooked through and no longer pink.
Add the mixed vegetables to the pan. Stir-fry for another 3-4 minutes, until the vegetables are tender-crisp.
Reduce the heat to medium. Add the cooked soba noodles to the pan, along with the soy sauce. Toss everything together so that the noodles and vegetables are evenly coated in the sauce.
Continue stirring and cooking for an additional 1-2 minutes to allow the flavors to meld. Adjust seasoning with more soy sauce, salt, or pepper as desired.
Serve the stir-fry hot, garnished with chopped peanuts if using.
