Cut the chicken breast into bite-sized pieces and season with salt, black pepper, and dried oregano.
Cook the soba noodles according to package instructions. Once cooked, drain and set aside.
Dice the eggplant and bell pepper into small cubes. Mince the garlic and ginger. Slice the scallions.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Add the garlic, ginger, eggplant, and bell pepper. Stir-fry for about 5 minutes or until the vegetables are tender.
Return the chicken to the skillet. Add the cooked soba noodles, baby spinach, soy sauce, sesame oil, and lemon zest. Toss everything together and cook for about 2 minutes until the spinach is wilted and everything is well combined.
Top with sliced scallions, adjust seasoning with more soy sauce or salt if needed. Serve hot.
