Slice the chicken breast into thin strips and set aside.
Peel and thinly slice the onion, mince the garlic, and grate the ginger.
In a large pan over medium heat, add the vegetable oil. Once hot, add the sliced onions and sauté for 3-4 minutes until translucent.
Add the minced garlic and grated ginger to the pan and sauté for another 1-2 minutes until fragrant.
Add the chicken strips to the pan and season with salt and black pepper. Cook for about 5-6 minutes until the chicken is no longer pink and cooked through.
Pour in the soy sauce and stir well to coat the chicken evenly. Cook for another 2 minutes.
Slice the green onions and scatter over the stir-fry. Cook for an additional 1 minute before removing from heat.
Serve the chicken and onion stir-fry hot, garnished with extra green onion if desired.
