Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the butter (softened to room temperature) and granulated sugar until light and fluffy. This should take about 3-5 minutes using an electric mixer.

Add the egg and vanilla extract to the butter and sugar mixture. Beat well until fully incorporated.

In another bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture. Mix until a soft dough forms.

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie to allow for spreading.

Optional: For an extra sprinkle of sweetness, lightly press each dough ball in some extra granulated sugar before baking.

Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers should be soft but set.

Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
