  • 1 whole large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a bowl, whisk together the flour, baking powder, and salt. Set aside.

In a separate large bowl, beat the butter and sugar together with an electric mixer on medium speed until creamy and light in color, about 3 minutes.

Add the egg and vanilla extract to the butter-sugar mixture and beat until combined.

Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Divide and roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet about 2 inches apart.

Gently press each ball with a fork to flatten slightly and create a crosshatch pattern.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
