Peel and grate the carrot into a medium bowl. Add the shredded red cabbage.
In a small bowl, whisk together the apple cider vinegar, olive oil, salt, and black pepper. Pour this dressing over the carrot and cabbage mixture. Toss well to combine and set aside to let the flavors meld.
Place the whole-wheat tortilla on a flat surface. Spread the plain yogurt or light mayo evenly over the surface of the tortilla.
On one half of the tortilla, layer the sliced turkey breast, followed by the mixed greens, tomato slices, and avocado slices. Sprinkle lightly with salt and black pepper.
Gently fold the tortilla over the filling, tucking in the sides as you go, to form a wrap. Slice the wrap in half diagonally for easier handling and serving.
Serve the turkey wrap alongside the carrot-cabbage slaw.
