A Japanese-inspired bowl that pairs a deeply savory, slightly sweet miso-charred salmon with warm autumn brown rice, bright quick-pickled shiitakes and silky sesame spinach. Textures range from crisped salmon skin to tender mushrooms and fluffy rice, finished with lemon zest, toasted sesame and scallions for freshness—elevating weeknight ingredients into a restaurant-quality bowl.
Make the miso glaze and marinate the salmon: In a small bowl whisk together white miso (2 tbsp), mirin (2 tsp), low-sodium soy sauce (1 tbsp) and brown sugar or honey (1 tsp). Taste: the glaze should be boldly savory with a touch of sweetness to balance the miso’s umami. Pat salmon dry and season lightly with salt and pepper (skin side lightly salted). Spoon or brush about two-thirds of the glaze over the flesh of the salmon, reserving about 1/3 for finishing. Let sit 10–15 minutes at room temperature while you prep the other components — this short marinade both flavors the fish and gives the glaze time to penetrate the surface for a better char when searing.
Quick-pickle the shiitakes: Combine rice vinegar (2 tbsp), granulated sugar (1 tsp) and a pinch of salt in a heatproof bowl. Stir to dissolve the sugar; warm (30 seconds) in the microwave if needed to help dissolve. Add the sliced shiitakes (120 g) and toss to coat. Let sit at room temperature for at least 10 minutes; the vinegar brightens the earthy mushrooms and adds contrast to the rich salmon. If you prefer a milder tang, rinse quickly after 5 minutes and drain — but keep some pickling liquid for spooning on the bowl.
Warm the rice: If your cooked brown rice (320 g) is refrigerated, loosen and reheat it by placing in a covered microwave-safe bowl with a tablespoon of water and heating 1–2 minutes, or steam briefly in a pan over low heat. Fluff with a fork and season lightly (a pinch of salt). Warming and fluffing the rice prevents clumps and helps it better absorb the dish’s finishing sauces.
Sear and char the salmon: Heat a heavy skillet (preferably cast iron) over medium-high heat until hot. Add the neutral oil (2 tsp) and immediately place the salmon skin-side down, pressing gently with a spatula for 10 seconds to ensure full skin contact — this produces an even, crisped skin. Sear skin-side down for 3–5 minutes depending on thickness, until skin is deeply browned and releases easily. Flip, spoon the reserved miso glaze over the top and sear the flesh side 1–2 minutes more—this short high-heat sear caramelizes the glaze and creates the signature char while keeping the inside tender. If your fillet is thick, finish in a preheated 400°F (200°C) oven for 3–4 minutes to desired doneness (internal 120–125°F/49–52°C for medium-rare to medium). Rest 3 minutes.
Cook the shiitakes for warmth and sheen (optional): After pickling, heat a small sauté pan over medium heat with 1 tsp neutral oil. Add the drained shiitakes and sauté 2–3 minutes until just warmed and glossy; add the minced garlic (1 clove) in the last 30 seconds to avoid bitterness. This step warms the mushrooms and softens them slightly while retaining the bright pickle flavor.
Quick sesame spinach: In a cold wide skillet or wok, add baby spinach (80 g) and toss over medium heat with the toasted sesame oil (1 tsp) and a pinch of salt — the residual moisture on the leaves wilts them quickly and preserves the vibrant green. Toss only until just wilted, 30–60 seconds. Overcooking removes the silkiness; short cooking keeps texture and nutrients.
Assemble the bowls: Divide the warm brown rice between two bowls (about 160 g cooked per bowl). Fan the salmon fillet (or cut into portions) over the rice. Arrange warm pickled shiitakes and sesame spinach alongside. Spoon any reserved quick-pickle or miso glaze (a little) over the rice for extra flavor. Sprinkle with toasted sesame seeds (2 tsp total), sliced scallions (2 tbsp), and lemon zest (1 tsp) to finish—these bright accents cut through richness and add aroma.
Serve and enjoy: Encourage diners to break the salmon flake and mix a bit of each component in each bite — the combination of char, umami, bright vinegar and nutty sesame is what makes this bowl sing. Leftovers: store components separately (rice, salmon, mushrooms, spinach) to preserve texture; gently reheat rice and salmon in a 300°F oven wrapped in foil to avoid drying.
